Reviewing dental insurance plans, What are lab fees

I been on line looking at many different dental insurance and plan types.  For the ones I have reviewed they will say something like plus the cost of lab fees or lab fees not included.  I am not sure why one would have lab fees for dental.  But if needed how do we know what this additional cost would be?
